Banana jam

1. Put the bananas, sugar, lemon juice and water in a heavy pan and stir over a low heat until the sugar dissolves.
2. Simmer, stirring often, for 20–25 minutes until thick and golden.
3. Stir in the vanilla and cinnamon, spoon into sterilised jars and seal. Refrigerate once opened.
