Bananas Foster

1. Melt the butter, sugar and cinnamon in a wide pan over a medium heat until bubbling.
2. Add the banana liqueur and the bananas and cook for 1–2 minutes a side until soft and glossy.
3. Take the pan off the heat, add the rum and carefully light it with a long match. Spoon the sauce over until the flames die down.
4. Serve straight away over ice cream.
